50 year-old Pinot Noir vinessustainablycultivated in the southernmost portion of the Aube in Champagne. Primarily stainless steel for fermentation the wine is a saigne (bled, i.e. macerates for several hours) ros prior to neutral oak levage. Bottled unfined, coarsely filtered, minimal added SO2 at bottling. Dosage <5.5g/L.
