In 2021, the trio created Summertime, focusing solely on producing sparkling wines, with zero additions from organically cultivated fruit that they produce. This is Chenin Blanc/Grolleau Gris spontaneously fermented in neutral oak barrel and bottled a la ancestral method. Unfined, unfiltered, no additional SO2. 11.5%ABV
