100% Melon de Bourgogne from a mix of terroirs across Gravel, clay, sand, and granite soils whose vines average 40 years of age. The fruit is hand-harvested before being directly pressed into stainless steel where spontaneous fermentation occurs prior to a 6-9month agingsur liein large underground glass-lined vats. Bottled the following spring. Coarsely (sterile) filtered, unfined, minimal added SO2. 12.5% ABV
