Vinification: 100% Juranon Noir hand-harvested from 50 year-old vines grown in calcareous soil. The grapes undergo a 7-day maceration followed by full spontaneous fermentation in cement tanks and barrels with only the help of native yeasts. Thejuice ages for 6 months in cement tanks and barrels before bottling. Unfined, unfiltered, with (sometimes) a touch (0-30mg/L) of SO2 depending on the vintage.
