100% organically cultivated Sangiovese from Chianti in the foothills just outside outside of Sienna. Grapes are hand-harvested, and macerate for one month prior to pressing. Spontaneous fermentation and aging for 1 year thereafter in cement tank. Bottled unfined, unfiltered, minimal (<30ppm) added SO2.
