100% Chardonnay from organically cultivated vines planted to the calcareous/blue marly soils of Escales at ~500m elevation in southern France\'s Corbires. Grapes are hand-harvested, directly pressed and spontaneously ferment and age in stainless steel for ~9 months prior to bottling unfined, unfiltered, minimal (<20ppm) added SO2. 12.5% ABV
